🍌 Easy &amp; Healthy Banana-Raspberry Baked Oats Have you ever heard of baked oats? If not, you're in for a treat. This cozy breakfast dish has taken TikTok and Instagram by storm—and for good reason. Baked oats transform humble ingredients into a soft, cake-like delight that feels indulgent but is secretly wholesome.🌾 What Are Baked Oats? Baked oats are essentially oatmeal reimagined. Instead of cooking oats on the stovetop, you blend them with other ingredients and bake them in the oven. The result? A warm, fluffy, almost dessert-like breakfast that’s endlessly customizable.This particular recipe is egg-free and can easily be made vegan by using plant-based milk. It’s perfect for busy mornings or slow weekend brunches.&nbsp; 🥣 Ingredients (Serves 2) 1 ripe banana 100g rolled oats 120ml milk (dairy or plant-based) 1 tsp baking powder 1 tsp vanilla extract Pinch of salt A handful of fresh raspberries Extra rolled oats for topping &nbsp; 🔄 Instructions Preheat your oven to 175°C (350°F). Blend the base: In a mixer or blender, combine the banana, rolled oats, milk, baking powder, vanilla extract, and salt. Blend until smooth and creamy. Prepare your ramekins: Lightly grease two 10cm ramekins or use a small baking dish. Pour the mixture evenly into each. Add the fruit: Gently press raspberries into the batter. This adds bursts of tart sweetness and a pop of color. Decorate: Sprinkle a few rolled oats on top for texture and a rustic look. Bake for 25–30 minutes, or until the top is set and slightly golden. My husband recently asked me to bake chocolate chip cookies—partly because our chocolate was nearing its expiration date, and partly because, well, who doesn’t love cookies?This recipe is a classic with a twist: candied orange peel adds a subtle citrus zing that pairs beautifully with melty chocolate. But don’t worry—if you don’t have orange peel on hand, the base recipe is just as delicious.&nbsp; 🍊 Ingredients (Makes 8 thick cookies) 100g unsalted butter 100g caster sugar 30g granulated sugar 1 egg 1 tsp vanilla sugar 220g flour 1 tsp baking soda ½ tsp sea salt 40g candied orange peel (optional) Chocolate chips or chopped chocolate (amount to taste) &nbsp; 🧁 Instructions Cream the butter and sugars: Mix the butter, caster sugar, and granulated sugar until smooth and fluffy. With the bedroom freshly tidied and my cat Koos perched on his little stool to watch me bake, it’s the perfect moment to whip up something seasonal and comforting: a pumpkin spice roll.I’m a big fan of anything pumpkin, and this recipe is no exception. It’s soft, spiced, and filled with a luscious cream cheese filling. Whether you're curled up with tea or dreaming of American pumpkin pie in cities like Boston or Chicago, this roll brings autumn right to your plate.&nbsp; 🍂 Ingredients For the cake: 200g pumpkin puree (from cooked pumpkin cubes) 80g flour 1 tsp baking powder 2 tsp pumpkin spice 4 eggs 75g brown sugar Pinch of salt 30g butter, melted 2 tsp vanilla extract For the filling: 200g cream cheese 250ml whipping cream 30g sugar &nbsp; 🧁 Instructions Step 1: Make the Pumpkin Puree Peel and cube a whole pumpkin. Cook the cubes for 12–15 minutes until soft. Blend 200g of the cooked pumpkin with melted butter and vanilla extract until smooth.Step 2: Prepare the Cake Batter Mix flour, baking powder, and pumpkin spice in a bowl. In a separate bowl, whisk eggs, brown sugar, and salt for 5–6 minutes until fluffy. Gently fold in the flour mixture. Slowly add the pumpkin puree by hand to keep the batter airy.Step 3: Bake and Shape the Roll Preheat oven to 180°C (356°F). Spread the batter on a lined baking tray and bake for 12 minutes. When I first started vlogging, I filmed everything on my iPhone 13 Mini — and I still use it from time to time. You don’t need an expensive camera to create silent, aesthetic vlogs. However, I’ve found that a more advanced camera can really elevate your creative work.
After doing some research, I treated myself to a pre-loved Sony A7C, and I absolutely love the quality it offers. I hope to use it for many years to come. It took a bit of time (and many YouTube tutorials) to learn the basics, but after about two months, I finally got the hang of it.
If you’re unfamiliar with terms like aperture, shutter speed, ISO, and LUTs, it might feel overwhelming at first — but trust me, it’s worth it!
