Dutch Apple Pie with Gingerbread Spice

🧔 Ingredients (for 18cm / 7-inch springform pan - for a 24cm springform pan see the amounts at the end of this post)
Dough:
225g flour (1¾ cups)
100g light brown sugar (½ cup)
¾ of 1 beaten egg (reserve ¼ for brushing)
1 tsp vanilla extract
Pinch of salt
125g butter, softened (½ cup + 1 tbsp)
Filling:
500g tart apples (Jonagold, Granny Smith, Braeburn) (about 4 medium apples)
Juice of ½ lemon
50g raisins (ā…“ cup), soaked in warm water
25g granulated sugar (2 tbsp)
1 tbsp gingerbread spice (Lebkuchengewürz)
Optional: powdered sugar for dusting
 
šŸ³ Instructions
1. Prepare the dough
Mix flour, sugar, egg, vanilla, salt, and softened butter into a smooth, compact dough.
Line the springform pan with baking paper and grease it.
Press about ¾ of the dough into the bottom and sides of the pan.
šŸ’” Tip: Chill the dough for 20 minutes before pressing into the pan—it makes handling easier.

 
2. Prepare the filling
Peel, core, and dice the apples.
Toss with lemon juice to prevent browning.
Drain raisins and mix with apples.
Add sugar and gingerbread spice, stirring well.
šŸ’” Tip: If you prefer a milder spice note, use 2 tsp instead of a full tablespoon.

 
3. Assemble the pie
Fill the crust with the apple mixture.
Roll out the remaining dough and cut into strips.
Lay strips over the filling in a lattice pattern.
Brush with the reserved beaten egg.
 
4. Bake
Bake at 175°C (350°F) for about 1 hour, until golden brown.
Cool slightly before serving.
Dust with powdered sugar if desired.
šŸ’” Tip: Place the springform pan on a baking sheet to catch any juices that may bubble over.

 
šŸŽ„ How to Mix Your Own Lebkuchengewürz (Gingerbread Spice)
Combine the following ground spices:

2 tsp cinnamon
1 tsp cloves
1 tsp allspice
1 tsp nutmeg
1 tsp coriander
½ tsp cardamom
½ tsp ginger
½ tsp anise
šŸ’” Tip: Store in an airtight jar. This blend is perfect for cookies, cakes, and festive pies.

For a 24cm / 9-inch Pan adjust the ingredients as follows:
Dough:
340g flour (2¾ cups)
150g light brown sugar (¾ cup)
1½ eggs (beat 2 eggs, use about ¾ of the mixture for dough, reserve the rest for brushing)
1½ tsp vanilla extract
Pinch of salt
190g butter, softened (¾ cup + 1 tbsp)
Filling:
750g tart apples (Jonagold, Granny Smith, Braeburn) (about 6 medium apples)
Juice of 1 lemon
75g raisins (½ cup), soaked in warm water
40g granulated sugar (3 tbsp)
1½ tbsp gingerbread spice (Lebkuchengewürz)
Optional: powdered sugar for dusting
