A Springtime Treat to Spoil Yourself
I love it when spring arrives. The sound of birds, the fresh green leaves, and the trees bursting into bloom always lift my spirits. And after a long morning of wallpapering the bedroom — satisfying but definitely hard work — I decided to spoil myself with something cozy and delicious: homemade apple‑cinnamon rolls.
These rolls are soft, fragrant, and filled with buttery cinnamon goodness. The apples add a juicy sweetness that makes every bite feel like a warm hug. Perfect for a spring afternoon.
🌾 Ingredients
For the dough:
420g flour (sifted)
1 tsp baking powder
½ tsp cardamom
½ tsp salt
200 ml lukewarm milk
30g light soft brown sugar
7g yeast
1 egg
2 tsp vanilla extract
90g melted butter
For the filling:
130g butter
2 tbsp cinnamon
130g soft brown sugar
2 apples, diced
Optional: a handful of raisins
For the glaze:
125 ml milk
250g powdered sugar
🧁 Instructions
Step 1: Prepare the Dough
Sift the flour into a large bowl and mix in baking powder, cardamom, and salt.
Warm the milk gently and dissolve the brown sugar in it.
Remove from heat, stir in the yeast, and let it sit for 5 minutes until foamy.
Add the milk mixture and the egg to the flour. Mix with a dough hook for 2 minutes.
Add vanilla extract and melted butter.
Mix for another 7 minutes until smooth and elastic.
Shape into a ball, place in a bowl, cover, and let rise for 45 minutes in a warm spot.
Step 2: Make the Filling
Mix butter, cinnamon, and brown sugar into a smooth paste.
Dice the apples into small pieces.
Prepare raisins if using.
Step 3: Roll & Shape
Lightly flour your work surface.
Roll the dough into a 30 × 40 cm rectangle.
Spread the cinnamon‑butter mixture evenly over the dough.
Sprinkle the apples and raisins on top.
Roll up tightly from the long side.
Cut into slices about 4 cm thick.
Place them in a baking dish, cut side up.
Pour 50 ml milk over the rolls to keep them soft and moist during baking.
Step 4: Bake
Bake at 175°C for 40 minutes until golden and fragrant.
Step 5: Glaze
Mix milk and powdered sugar into a smooth glaze.
Drizzle generously over the warm rolls in a zigzag motion.
Let cool for 20 minutes before serving.
💡 Baking Tips
Tip 1 — Prevent tearing: Let the dough rest overnight in the refrigerator. This relaxes the gluten and makes the dough easier to roll out without ripping.
Tip 2 — Make a big batch: Instead of individual rolls, you can roll the dough into one long log and bake it as a large apple‑cinnamon strudel‑style roll, even shaping it like a horseshoe. It looks beautiful and is easier to slice.
