🍏 Healthy Apple Cake — The Perfect Snack for the Road
Daydreaming in the garden brings a sense of calm, but when adventure calls—like a scenic drive to Giethoorn—it’s always wise to pack a nourishing snack. This healthy apple cake is simple, satisfying, and ideal for travel. It’s naturally sweetened, packed with oats, and keeps beautifully for days.

Whether you're heading out for a two-hour drive or just want something wholesome to enjoy with tea, this cake fits the moment.

 
🌿 Ingredients
130g oats
3 eggs
2 apples
2 tsp cinnamon
1 tbsp honey
 
🧁 Instructions
Prep the apples: Remove the cores and cut both apples into smaller pieces.
Blend the base: Add one apple to a mixer along with the oats, eggs, cinnamon, and honey. Blend until smooth.
Prepare the second apple: Cut one quarter into thin slices for decoration.
Dice the remaining three quarters into small cubes.
Line your dish: Use baking paper to line a glass baking dish (like the Ikea 365+ series, which is oven- and freezer-safe).
Combine: Stir the apple cubes into the batter and pour it into the dish.
Decorate: Arrange the thin apple slices on top. Sprinkle with extra oats and a dash of cinnamon.
Bake at 180°C (356°F) for 30–35 minutes, or until golden and set.
Cool completely before removing from the dish.
Slice into 6 pieces and enjoy!
